What is irregular about comenzar
Two things happen. The stressed e becomes ie: comienzo, comienzas, comienza, comienzan, but comenzamos, comenzáis. And z is written c before e: comencé in the preterite (the other persons are regular: comenzaste, comenzó) and throughout the present subjunctive, where both changes can meet: comience, comiences, comience, comencemos, comencéis, comiencen. The z → c change is spelling only; the sound stays the same.
Spanish spelling avoids z before e, so the letter switches to c. The pronunciation does not change.

The ie needs a stressed stem. In the preterite the stress is on the ending, so e stays in every person: comencé, comenzaste, comenzó.
