What is irregular about preferir
The last e of the stem becomes ie under stress: prefiero, prefieres, prefiere, prefieren, but preferimos, preferís. As a stem-changing -ir verb it has a second change, e → i: in the third person of the preterite (prefirió, prefirieron), in the nosotros and vosotros forms of the present subjunctive (prefiramos, prefiráis), in the imperfect subjunctive (prefiriera) and in the gerund prefiriendo. The future and conditional are regular.

Common mistakes with preferir
Prefiero el té que el café.→Prefiero el té al café.
The thing you like less is introduced by a, not que: preferir A a B. With el the preposition contracts to al.

The ie appears only under stress, in the present and the present subjunctive. In the third person of the preterite and in the gerund the vowel is a plain i: prefirió, prefiriendo.
Prefiero más el té.→Prefiero el té.
Preferir already means "to like more", so más is redundant. Use más with gustar instead: Me gusta más el té.
When to use preferir
The conditional preferiría is the polite way to state a choice, like "I'd rather": Preferiría no salir hoy.
